Pig Hunting at Cangelosi Ranch

This pig weighed somewhere close to 300 lbs. I could not lift or move
it far.
I had a tough time getting it in my trailer which is only 14 inches off
the ground.
Going through the cleaning and butchering process assured me I would
never shoot
another pig that large again. Now that we have eaten the thing, we have
changed our mind. It was great!


Carlo Cangelosi, Owner of the Ranch, invites us out, pays for the food,
cooks, cleans, works,
then has a hard time finding time to relax, hunt and enjoy. We gotta
work on him.

These are Javelina. A small long hair wild pig that lives in South
Texas, (pronounced "havalena"). Rarely weighs over 40 lbs.
Despite a reputation for a questionable "taste" we have found the meat
to be lean and tastey. It does, however,
take a whole hind quarter for a Sunday afternoon Roast. I have recently
donea "Javelina Ham" on my new smoker.
Hard to believe that I cooked it. Javelina ribs
are next best thing to Chilies baby back ribs.
